The second part of the blissful lunch at "Jiki Miyazawa".
Sakura trout with bracken mushroom malt sauce.
At first glance, it looked like pickled shiba, but it was actually finely chopped bracken.
Combined with the mushroom sauce made with malt, which Chef Izumi is good at, it was a perfect match.

It was my first time to have it cut into a tube,
the bones were carefully removed,
and the bones were turned into Japanese pepper as a condiment.
This was also a masterpiece!! It was delicious!
Usually, freshly cooked rice is served as is,
but the first bowl of the upper course is bamboo shoot rice.
Grilled bamboo shoots are served as is so that you can enjoy the aroma and texture,
and usually this alone would be a luxurious lunch.
Homemade dried baby sardines with Japanese pepper,
and homemade pickled rice bran are also classic and delicious.
For dessert, we had freshly baked monaka with strawberry pickled plums. The plate the monaka came on was Old Baccarat. You won't find a monaka on a Baccarat anywhere else (lol). Thank you for the wonderful food and drinks. Kyoto is overflowing with foreign tourists, school trip students, and Japanese tourists, even more than it was during the New Year holidays. Miyazawa-san seems to have foreign customers every day. They've been getting reservations for a while now, but I'm daydreaming about taking my gourmet friends on a Kyoto gourmet trip with Miyazawa-san and others this year!
